1 (9-ounce) package frozen artichoke hearts, thawed and coarsely chopped
3 Tbl commercial fat-free Italian dressing
1/2 cup lite ricotta cheese
1/4 cup crumbled feta cheese 2 Tbl nonfat sour cream
1/8 tsp hot sauce
2 cloves farlic, minced
1 (16-ounce) Italian bread shell
2 plum tomatoes, thinly sliced
1 yellow tomato, thinly sliced
1/8 tsp paprika
1/8 tsp cracked pepper
1 fresh cilantro sprigs (optional)
Methods/steps
Combine artichoke and Italian dressing; toss gently. Cover and chill at least 30 minutes; drain. Combine artichoke mixture, ricotta cheese, and next 4 ingredients, stirring well. Spread evenly over bread shell. Arrange tomato slices over artichoke mixture. Sprinkle with paprika and pepper. Bake at 450 degrees for 15 to 18 minutes or until thoroughly heated.
